Dark Chocolate & Cashew Bites

These bites are a twist on Hemsley & Hemsley’s version. They are completely gluten-free and very low in sugar but high in taste and flavour. I brought these into work recently and they went down a storming success so try them and you won’t be disappointed!!

  • 400g tin butter beans; drained & rinsed
  • 4 tbsp honey or maple syrup
  • 100g ground almonds
  • 2 eggs
  • 2 tsp vanilla extract
  • 100g cashews soaked for 3 hours
  • 75g unsalted butter, softened
  • 100g dark chocolate chunks
  • 1/2 tsp bicarbonate of soda
  1. Preheat an oven to 170°C. Drain the cashews, place in a baking tray and bake in the oven for 7 minutes whilst its heating up. Line a square sandwich tin with parchment paper.
  2. With a food processor or electric beater (if using an electric beater, would recommend you mash or blend the beans first), blitz all the ingredients except the cashews and chocolate together until smooth.
  3. Stir through 75g cashews and 80g dark chocolate chunks.
  4. Pour into the tin and scatter the remaining cashews and dark chocolate over the top.
  5. Bake in the oven for about 30 mins until a skewer comes out clean.
  6. Leave to cool in the tin, remove and cut into bites.
