I have a weird and long-lasting love affair with beetroot!!
I simply can’t get enough of the vibrant red root vegetable. I know a lot of people who detest beetroot and plenty more who adore it not quite as much as me but are still big fans of beetroot.
No doubt about it beetroot does have an earthy taste. It does after all grow deep in the soil and begin to literally burst from the ground when ready to be picked, so I can understand the earthy taste. Beetroot can taste sour if pickled. It can also taste very sweet when boiled, roasted or used in baking.
I will happily eat beetroot in any form, raw, steamed, roasted, boiled or pickled. Beetroot is right in season throughout September and October so enjoy what is in season right now.
Here are some of my favourite ways to eat beetroot this Autumn:
Morning Oats – add both the juice and grated beetroot to your daily bowl of oats with this Beetroot & Coconut Oats recipe.
Roast – drizzle some beetroot and garlic cloves in a little oil, salt and pepper. Roast in the oven until soft and serve with a moreish garlic dip.
Salad – grate raw beetroot and carrot together and mix with a balsamic and sesame dressing to create this Beetroot & Carrot Sesame Slaw.
Shape – nothing beats a batch of my Beetroot, Black Bean & Feta Burgers. This are great to make ahead and have waiting in the freezer for a quick midweek meal.
Batch Cook: give your belly and senses a big colourful hug with this Beetroot & Mushroom Quinoa Risotto.
