Slow Roasted Tomatoes

The flavour that is packed into these Slow Roasted Tomatoes really needs to be tasted to be believed!!

Make sure to use Irish grown or even better home grown tomatoes for even more natural flavour. Don’t forget to make these tomatoes your own too with herbs like rosemary, oregano or spices like paprika or fennel added in.

As you only need the oven for a short duration, double up when your using the oven for another dish and add the tomatoes in at the bottom for the last 20 minutes.

Makes half a jar full.

  • 500g cherry tomatoes
  • salt and pepper
  • 1 tbsp balsamic vinegar
  1. Preheat the oven to 200°C/180°C fan/400°F.
  2. Halve the tomatoes and place into an ovenproof dish. Season with salt and pepper, pour the balsamic vinegar over and mix all together.
  3. Place into the oven for 20 minutes. Turn the oven off and leave the tomatoes in to slow roast as the oven cools down.
  4. Remove about 1 hour later and store in an airtight container in the fridge.
